Butter Tarts
Today, I decided to try my hand at making butter tarts. It's cold and snowing outside, so this is a good moral booster. What's better then having fresh out of the oven warm Butter Tarts to enjoy with a nice glass of milk? I've never made these in the past, but googled and found an easy pie crust recipe you don't need to chill before you can use it, and another for the Butter Tart filling with Maple syrup! So with recipes in hand, I started.
I made the pie crust first. It was a bit more of a challenge as I didn't have my pastry cutter here (I had to literally cut the butter into the flour with a knife and fork, it took me a lot longer to do it the old fashion way).
I had to modify the Butter Tart filling recipe a bit because we didn't have have enough maple syrup, but it turned out delicious anyway. I was worried they would not turn out, but my husband declared them a HUGE success! So I'm pretty happy with my results.
I'm not too sure it is boat friendly - preparing the Tart crust is a bit of work to roll out the dough, cut it (I used a round lid to get the right size) and line each muffin tin. The filling was easy to do and clean up wasn't too bad.
Pie Crust Recipe
2 cups Flour
1 tsp Salt
2/3 cup Butter
7 tbsp Cold Water
Butter Tart filling Recipe
3 Eggs
1 cup Maple Syrup (I used 1/3 maple syrup and 2/3 normal pancake syrup)
2/3 Brown Sugar (packed)
1/3 cup Butter (melted)
1 pinch salt
optional - 1 cup raisins or walnuts or pecans...

2 cups Flour
1 tsp Salt
2/3 cup Butter
7 tbsp Cold Water
- In medium sized bowl, add flour and butter.
- With pastry cutter, cut butter into flour.
- Add salt and water.
- Mix until dough is formed.
- Roll out (I used a lid, aprox 3" wide to cut the shape to insert into the muffin tins)
- Preheat oven - Bake at 375 (if recipe calls for cooked pie shells - otherwise don't cook yet)
Butter Tart filling Recipe
3 Eggs
1 cup Maple Syrup (I used 1/3 maple syrup and 2/3 normal pancake syrup)
2/3 Brown Sugar (packed)
1/3 cup Butter (melted)
1 pinch salt
optional - 1 cup raisins or walnuts or pecans...
- Beat together - eggs, maple syrup, brown sugar, butter and salt.
- optional - put 3 or 4 nuts in (uncooked) prepared tart shells (muffin tins)
- Pour mixture into prepared uncooked tart shells
- Bake at 375 - 20 to 25 minutes
- Cool 5 minutes and remove from pan
