Sun Dried Tomato Pesto bread twist (made with pizza dough)

I love recipes that are multi-use, easily adaptable - with a bit of imagination and inspiration by other recipes. Here is an easy appetizer recipe, using my pizza dough recipe. It was a perfect little something to bring at dock-tales! Ready to Eat Easy Pizza Dough Ingredients: (For small 12” pizza ) 1 cup Flour 1 / 3 cup Milk 2 tbls Vegetable Oil 1 tsp Baking Powder 1 / 2 tsp Salt Filling: Sun Dried Tomato Pesto  Grated Parmesan Cheese Dipping sauce of choice (optional) Directions:  Preheat oven to 425 Combine all ingredients for Pizza dough in a bowl until the dough leaves the sides Turn onto a lightly floured surface and knead 10 times Cover with bowl for 15 min (let rest) Prepare cooking tray - Non-stick spay or line with parchment paper Roll out pizza dough in a rectangle - as flat as you can (3 mm is good) Spread Sun Dried Tomato Pesto on top - not too thick  Fold in three (like a letter)  Cut slices approximately 1 inch wid

Easy Home made Pizzas

Who does not love pizza? I don't know very many people who don't. I have been using this recipe on the boat to make pizza or pizza pockets. It's a great way to use up leftovers, if you have sauce and cheese... well, you can't go wrong. Home made pizza on the boat! Crêpes on the boat Crepes with strawberries - Yummy!!! Our galley is on the "smaller" size, so that means it's either me or my husband preparing meals most days. One of the meals that Papi likes to do (and eat) is "crêpes', and I have to admit - I enjoy it when he makes them.  Updated: This recipe can be done Gluten-Free with awesome results! (We couldn't tell the difference) Here is his recipe:  Crêpes Ingredients: 1 cup Flour (use Bob's Red Mill 1for1) 1 / 4 tsp Salt 1 tbls Sugar 2 Eggs (large) 1 1 / 2 cup Milk 1 tsp Vanilla extract (Gluten Free) 1 tbls Vegetable Oil Optional:   fresh fruit   maple syrup Let crêpe batter rest a bit. (very important if you are using GF flour) Pour in heated skillet Cook one side then flip to cook other side. Serve warm You don't need a lot of space to prepare a great meal.

Apple pie

I can't remember where we where, but I was itching to try a new pie crust recipe I had found online. What could be better than trying it out by making an apple pie?  The pie crust was a bit dry and crumbly - so I will not share that one here... Not all my tries are a success 😉. But I will share the pie crust recipe that always turns out great! Here is a no-fail combination for a great apple pie (crust and filling) Pie crust recipe: 2 cups Flour 1 tsp Salt 2/3 cup Butter 7 tbsp Cold Water In medium sized bowl, add flour and butter. With pastry cutter, cut butter into flour. Add salt and water. Mix until dough is formed. Separate in two.  Roll out and line bottom of pie plate and keep other for top Preheat oven - Bake at 375 (Note: only if recipe calls for pre-cooked pie shells - otherwise don't cook yet!)  Apple Pie filling: 6 to 8 apples – peeled and sliced 1 / 2 cup brown sugar 2 tbls flour 1 tsp cinnamon Toss all ingredients together in bowl. Oatmeal Banana Cookies

Oatmeal Banana Cookies This has to be the easiest recipe I have found and tried! Seriously, it is simple to make and is a small enough batch to cook in the toaster over. This recipe is known as a two ingredients recipe, but that is somewhat of a lie, almost everyone will be adding at least one or two ingredients. For those, who like me, love trying new recipes, here it is: Oatmeal Banana Cookies 2 large Bananas 1 Cup Quick Oats 1 Tsp Cinnamon (Optional) 2 Tbls Chocolate Chips (Optional) Preheat toaster oven @ 375, if using oven preheat @ 350 Crush bananas in bowl. Add Oatmeal (quick oats) and Cinnamon (if desired), mix until it is well combined. Fold in chocolate chips. Drop by spoonful on greased pan (very important, I used Pam spray)  Makes 6 cookies Bake in toaster oven (or oven) 15 minutes I have actually made these a couple times already. Butter Tarts

Butter Tarts Today, I decided to try my hand at making butter tarts. It's cold and snowing outside, so this is a good moral booster. What's better then having fresh out of the oven warm Butter Tarts to enjoy with a nice glass of milk? I've never made these in the past, but googled and found an easy pie crust recipe you don't need to chill before you can use it, and another for the Butter Tart filling with Maple syrup! So with recipes in hand, I started.  I made the pie crust first. It was a bit more of a challenge as I didn't have my pastry cutter here (I had to literally cut the butter into the flour with a knife and fork,  it took me a lot longer to do it the old fashion way). I had to modify the Butter Tart filling recipe a bit because we didn't have have enough maple syrup, but it turned out delicious anyway. I was worried they would not turn out, but my husband declared them a HUGE success! So I'm pretty happy with my results. I'm not

Bread in a Bag (Mini Loafs)

I love to find new recipes online that I can use on the boat, camping or even at home.  I found this one when I was looking for "non-messy bread recipes" and have been wanting to try it out for a while now. It looked like fun to do and almost too good to be true!   This morning, I got to test it out, and get the answers to a few question:   1 - Can I bake it in the toaster over?   2 - How does it taste?   3 - How much of a mess will I have to clean? (on the boat, I don't want to have a big mess - ie: flour everywhere) Here are my observations: 1 - Yes, you can bake it in the toaster oven, however mine burnt a bit. 2 - It tasted delicious!!! A new favorite has been found. 3 - Almost no mess - I scrapped off the dough (that stuck to the cutting board I used to knead) right into the garbage. Wiped up the flour next to it and threw out the large Ziploc bag I used. I cooked one in the normal oven (the one that is still intact in the photo above)

Cooking on a small boat - published on Migrating Loons

For over 10 years, we had a Larson 220 Cabrio cuddy cabin power boat (Paco2).  The cooking facilities were somewhat limited, but we learnt how to work with what we had.  A BBQ, butane stove, fixed alcohol stove, cooler and a 5 gallon water tank - that was it! We cooked some great meals on that boat! Sheppard's pie, muffins, and crepes where just some of the non typical foods we prepared and enjoyed during our trips. I will be keeping track of my hits and misses as we travel longer and further by boat this time. I'm sure I'll be applying what we learnt on Paco2, and improve on it.  I've already started collecting recipes that I think will be appropriate, and I can't wait to try them. Until next time, Tina
