Beer Bread

Here is a recipe that never fails to amaze me. It is so easy and quick to do, that even the lazy baker will love it! (I love an easy recipe!) Here it is: Beer Bread Ingredients: 3 Cups Flour 4 tsp Baking Powder 1 / 4 cup Brown Sugar (packed) 12 ounces BEER (for best results ensure it is room temperature) 1 / 2 tsp Salt Preheat oven to 375, Spray 9x5 loaf pan with non-stick spray In bowl combine: flour, brown sugar, baking powder and salt. Pour in beer – stir until just combined. Pour batter in loaf pan Bake 45 to 55 min   -   allow to sit 15 min before serving Note: If cooking with a toaster oven - which is what I do on the boat, I use two small foil pans and divide the batter between them.  They will not be as high as a normal loaf of bread, but they will cook much better.   Bake @ 375 for 30 min (in toaster over, in 2 smaller pans)

I love recipes that are multi-use, easily adaptable - with a bit of imagination and inspiration by other recipes. Here is an easy appetizer recipe, using my pizza dough recipe. It was a perfect little something to bring at dock-tales! Ready to Eat Easy Pizza Dough Ingredients: (For small 12” pizza ) 1 cup Flour 1 / 3 cup Milk 2 tbls Vegetable Oil 1 tsp Baking Powder 1 / 2 tsp Salt Filling: Sun Dried Tomato Pesto  Grated Parmesan Cheese Dipping sauce of choice (optional) Directions:  Preheat oven to 425 Combine all ingredients for Pizza dough in a bowl until the dough leaves the sides Turn onto a lightly floured surface and knead 10 times Cover with bowl for 15 min (let rest) Prepare cooking tray - Non-stick spay or line with parchment paper Roll out pizza dough in a rectangle - as flat as you can (3 mm is good) Spread Sun Dried Tomato Pesto on top - not too thick  Fold in three (like a letter)  Cut slices appro...

Who does not love pizza? I don't know very many people who don't. I have been using this recipe on the boat to make pizza or pizza pockets. It's a great way to use up leftovers, if you have sauce and cheese... well, you can't go wrong. Home made pizza on the boat! Bread in a Bag (Mini Loafs)

I love to find new recipes online that I can use on the boat, camping or even at home.  I found this one when I was looking for "non-messy bread recipes" and have been wanting to try it out for a while now. It looked like fun to do and almost too good to be true!   This morning, I got to test it out, and get the answers to a few question:   1 - Can I bake it in the toaster over?   2 - How does it taste?   3 - How much of a mess will I have to clean? (on the boat, I don't want to have a big mess - ie: flour everywhere) Here are my observations: 1 - Yes, you can bake it in the toaster oven, however mine burnt a bit. 2 - It tasted delicious!!! A new favorite has been found. 3 - Almost no mess - I scrapped off the dough (that stuck to the cutting board I used to knead) right into the garbage.
