Oatmeal Banana Cookies

Oatmeal Banana Cookies

This has to be the easiest recipe I have found and tried! Seriously, it is simple to make and is a small enough batch to cook in the toaster over. This recipe is known as a two ingredients recipe, but that is somewhat of a lie, almost everyone will be adding at least one or two ingredients. For those, who like me, love trying new recipes, here it is:

Oatmeal Banana Cookies

2 large Bananas
1 Cup Quick Oats
1 Tsp Cinnamon (Optional)
2 Tbls Chocolate Chips (Optional)

Preheat toaster oven @ 375, if using oven preheat @ 350

Crush bananas in bowl.
Add Oatmeal (quick oats) and Cinnamon (if desired), mix until it is well combined. Fold in chocolate chips.
Drop by spoonful on greased pan (very important, I used Pam spray)
Makes 6 cookies
Bake in toaster oven (or oven) 15 minutes

I have actually made these a couple times already. We jokingly call them our breakfast cookies. When we think about it, 3 cookies is 1 banana and 1/2 cup oats and chocolate chips - it's a healthy breakfast! (if you don't count the chocolate chips :)

This is easy to make and clean up is a snap, and it cooked well in the toaster oven - this is exactly what I want in recipes that I will be bringing and doing on the boat.

I am a happy baker today!
