Brownie in a Mug (Gluten Free)

Gluten Free Mug Brownie I tried a few "in a mug" recipes and never really liked them.  However, this one is worth doing again. It was as described in the blog I found it in.  (Link at bottom of the page.) Prep Time 5 mins / Cook Time 1 min / Total Time 6 mins / 1 Serving Ingredients 2 Tbs. Melted Butter 2 Tbs. Milk 2 Tbs. Gluten Free Flour Blend (Bob’s Red Mill 1 to 1) 2 Tbs. Cocoa Powder 2 Tbs. Brown Sugar ½ tsp. Vanilla Extract Pinch of Salt 1 Tbs. Chocolate Chips Directions Add the butter to a microwave safe mug (or ramekin) and microwave on high for 20 seconds until the butter melts. Add the milk, gluten free flour, brown sugar, cocoa powder, vanilla extract, and pinch of salt to the mug and mix well. Fold the Chocolate Chips into the mixture. Microwave the brownie batter for 1 minute. Allow mug brownie to cool in the microwave for 1 minute before enjoying it. Fluffy Yogurt Pancakes (Gluten-Free)

Pancake with maple syrup. Here's another great easy recipe that I found last year.  We've made these a few times and they are always a success. With some maple syrup, they are oh so good! Prep Time 10 mins / Cook Time 10 mins / Total Time 20 mins / Servings 2  Ingredients 1/2 cup 1-to-1 gluten-free baking flour 2 teaspoons baking powder ¼ teaspoon salt 2 large eggs 2/3 cup nonfat plain Greek yogurt Directions Heat griddle or large skillet over medium heat. Spray with a nonstick cooking spray. In a small mixing bowl combine dry ingredients: flour, baking powder and salt. In a medium mixing bowl combine wet ingredients: eggs and yogurt. Add flour mixture into the egg mixture and whisk until blended.  Allow blended batter to rest for about 5 minutes if you want super fluffy pancakes. Burger Buns - Easy and Gluten Free (and Maple Syrop Burger patties)

Home made buns and maple flavored burgers! We're looking forward to spring, can you tell?  Mid-February and we're already on the BBQ. For those who are wondering, yes, it's still too early in year. We have way to much snow. Yes, it's that cold! 😀 Quick & Delicious GF Hamburger Buns Ingredients 2 1/2 cup gluten-free flour mix 2 1/2 tsp quick/rapid-rise yeast 1 1/2 tsp xanthan gum 1 1/2 tsp salt 1/2 cup milk  1/2 cup warm/hot water 1/4 cup butter, softened/half melted 4 Tbsp honey 2 eggs Directions Preheat oven to 400F.   Line a cookie sheet with parchment paper OR silicon mat. In a mixer bowl, combine dry ingredients (GF flour, yeast, xanthan gum, salt) Add the wet ingredients (milk, warm water, butter, honey, eggs)  Beat 3-4 minutes. Tangy Meatballs (Served over rice) This recipe is a combination of my moms "pineapple meatballs" and another sauce recipe I found.  I just recently changed it again to make it "Gluten Free". (The quick oats replace the same quantity of crushed crackers.) It's one of our favorite meals when I remember to thaw out the ground beef ahead of time. You can make the meatballs and use them in other recipes too.  Adding them to a pasta sauce for spaghetti and meatballs another favorite of ours. Ingredients: Gluten Free Meatballs - So Good! I love the taste of home made bread, and I've been having difficulty finding a good recipe that I can make with "normal" ingredients, and that doesn't need a bread machine or make a dozen loafs. I've tried a couple that were not so successful. Cinnamon Sugar Donuts - Gluten-Free

My husband is the one with celiac disease, so while I am still able to grab a quick bite at a drive thru, he doesn't have that option (other than ordering coffee). One of the things he's been missing is donuts and he just happened to mention it to me a couple days ago. That was the only excuse I needed to go out and buy a donut pan and find a recipe (small batch) that would be easy to do and actually taste great. Gluten Free Apple Fritter Bread

From our very own apple trees. I've been looking on Pinterest and Googling all kinds of recipes lately, trying to find those that I actually have all the ingredients.  I'm ashamed to admit, some recipes have ingredients that I have no idea what they are or where to get/find them.  When I find a recipe like this one "Gluten Free Apple Fritter Bread" I get all excited. I usually want to try it right away.  And I have to say, this one did not disappoint us, it's a keeper!  The recipe is very straight forward and easy, with basic ingredients. We opted not to add the glaze, it was already sweet enough for us and perfect without it.  The hardest part really was waiting until it had cooled on the wire rack.
